Pickling History

Pickling is the process of increasing the food’s shelf-life or preserving it by Salt, vinegar, and brine. It is very difficult to find out the origin of Pickling, archaeologists believe is originated in 2400 B.C. After several centuries later, Cucumber was being pickled by Indians in the Tigris hills. Pickling is an art of preserving the perishable food for longer times with the help of salt, brine, and vinegar.

It is assumed that the pickling was invented to cure the foods for a longer time, as in the summer the perishable food gets spoil, So the ancient peoples developed this technique to keep the food for a longer period. They cured the food by adding salt to it, drying it in the sun, or by adding herbs and spices to preserve it.

Ingredients

Marination

  • 500 mg boneless breast chicken
  • 2 tbsp Ginger Garlic Paste
  • ½ cup turmeric powder
  • ¾ tbsp salt

Ingredients for Cooking Chicken

  • ½ cup mustard oil
  • 1 tbsp mustard seeds
  • 1012 piece curry leaves
  • 1520 pods garlic cloves
  • 34 piece lemons

Ingredients for Pickle Recipe

  • 10 piece red chilies
  • 1 tbsp fenugreek seeds
  • 1 tbsp coriander seeds
  • 1 tbsp mustard seeds
  • 1 tbsp black peppercorn
  • ½ tbsp garam masala powder
  • ¼ tbsp asafoetida
  • 1 tbsp turmeric powder
  • 1 tbsp mango powder (amchur)

Instructions

  1. 1 Marinate chicken for 30 minutes with the marinating ingredients above mentioned.

  2. 2 Cook the chicken in the skillet/pan, until the water gets evaporates.

  3. 3 After that, deep fry the cooked chicken in pan/skillet till the color changes to a golden brown.
  4. 4 Take another pan and add the ginger-garlic paste till the color changes to a golden brown.
  5. 5 Saute the pickle spices for a while add salt to it.
  6. 6 Add deep-fried chicken pieces in the pan and mix well.
  7. 7 Cooldown and add lemon juices.

Instruction for Tempering

  1. 1 Place the skillet/pan to flame, Add oil.
  2. 2 Add fenugreek seeds, add garlic cloves, and dry red chilies.
  3. 3 When it turns golden brown, add curry leaves.
  4. 4 Turn off the Flame, and transfer it to the pickle. Mix well and serve it.
